Oatmeal Butterscotch Cookies

1 1/4 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 tsp. vanilla extract
3 cups old fashioned oats
1 pkg. Butterscotch Morsels (1 2/3 cups)

Cookie Base Batter

2 3/4 cups all purpose flour
1 tsp. salt
1 tsp. baking soda
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 tsp. vanilla extract

Preheat oven to 375 degrees.
In a bowl, combine flour, baking soda, salt and cinnamon.
In a mixer bowl, beat softened butter, granulated sugar, brown sugar until fluffy. Add eggs and vanilla extract and mix until combined.
Mix in flour mixture gradually and until all it mixed together.
Mix in oats and morsels until just evenly mixed.
Drop onto a cookie sheet lined with parchment paper. I use a cookie scoop.
Bake for 9 minutes (or more depending on scoop size) for a chewy cookie or a little long if you want a crispy cookie. Cool on cookie sheet and remove to cool completely on a wire rack. Enjoy!

  • Chocolate Chip Cookies: Add a bag of Chocolate Chips of your choice.

  • White Chocolate Pistachio Cranberry: Add 2 cups total of white chocolate chips, chopped pistachios, dried cranberries.

  • White Chocolate Chip Macadamia Nut: Use a bag of White Chocolate Chips of your choice and a cup of chopped Macadamia nuts.

  • M & M Cookies: Add 2 cups total of plain M & M’s.

  • Cowboy Cookies: Add 2 cups total of chocolate chips, oatmeal, and walnuts chopped.

  • Use your imagination with this Cookie Base. It is fun to create some yummy goodies for family and friends.
